I lived in Spain for 3 years and ate lots of "tortillas" - Potato, onion and egg concoctions. Trying to make them at home was a little more difficult!! This recipe is a combination of the Spanish tortilla ingrediants and the Italian Frittata method of cooking them.

  • 1 package hash browns simply potatoes - regular or western style
  • 1 dozen eggs
  • 8 ounces cheese shredded - 4 cheese mexican cheese shreds is perfect for this dish

Crumble Sausage and brown with onion and remove from pan. Drain on paper towel to remove excess oils. Using same pan, brown Simply Potatoes hashbrowns according to package instructions (note: you are looking for color here, so it is more important to fry some crispness in than to try and hold hashbrowns together.) Add sausage and onion into potatoes and mix thoroughly. Scramble 12 eggs and pour over sausage and potato mixture. Allow to cook on stove top for 5 to 10 minutes, moving gently but constantly, to allow egg to flow to bottom of frying pan. When mixture appears to be cooked about half way up the side of the pan, remove from burner and place in pre-heated 350? oven for approximately 15 minutes or until egg sets completely. Remove from oven and add cheese, bake another 5 minutes until cheese is melted and browning. I use a concave, non-stick frying pan for this recipe and on removing from oven and allowing 5 minutes or so to cool, I can loosen from the pan and it will slide out onto a plate. Cut into pie slices, will serve 8. Can also be cut into small squares for appetizers. Can be served hot, room temp or cold.
