In a medium-size mixing bowl, add the eggs, milk, salt, and pepper; mix well. Coat a non-stick skillet with cooking spray. On medium-high heat, add the egg mixture. With a spatula, gently scrape the sides and bottom every few seconds as the egg continues to cook. Once all moisture is absorbed and the eggs are light and fluffy, remove from heat and serve hot.
