I needed to use up some spinach and threw this together. Very refreshing and great with buffalo chicken dip in a fryed flour tortilla.

  • 2 cups spinach whole-leaf washed and dried chopped up
  • 2-4 chives or onion diced
  • 1 medium roma tomato diced
  • 1 tablespoon pickled jalapenos diced
  • 1 splash lemon juice

Chop spinach. Dice chives, tomato and jalapenos. Combine all ingredients. Add lemon juice, salt and pepper. Toss together. A nice fresh salsa with mexican food. A dollop of sour cream helps round it out. Note: Most of the ingredient amounts are to your taste. Hope you enjoy.
