Every year I make my dad granola for the holidays, and it always disappears fast. Feel free to adjust the ingredients, adding in dried fruit when the granola is done baking or substituting different types of nuts.

  • 1 cup vegetable oil
  • 3 teaspoons salt
  • 12 cups rolled oats
  • 4 cups slivered or sliced almonds
  • 4 cups cashew pieces
  • 3 cups shredded/flaked unsweetened coconut
  • 1/4 to 1/2 cups dark brown sugar
  • 1 1/2 cups real maple syrup

1. Preheat oven to 250 degrees F. 2. In a large bowl, combine the oats, nuts, coconut, and brown sugar. 3. In a separate bowl, combine maple syrup, oil, and salt. 4. Combine both mixtures and pour onto 4 sheet pans. 5. Cook for 1 hour 15 minutes, stirring every 15 minutes and rotating pans between top and bottom rack to achieve an even color. 6. Remove from oven and cool completely before storing in a glass or plastic container.
