  • 1 tablespoon olive oil
  • 1 cup buttermilk
  • 1 tablespoon baking powder
  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 1/4 cup applesauce
  • 1/4 cup greek yogurt

1. Preheat oven to 400 degrees. Spray 12 cup muffin tin with cooking spray. 2. Whisk together cornmeal, flour, baking powder and salt in a large bowl. Whisk together applesauce, eggs, buttermilk, yogurt and olive oil in another bowl. Pour wet ingredient mixture into dry ingredient mixture and whisk until just combined. Fill each muffin cup 3/4 full with batter. 3. Bake 15-20 minutes, until tester comes out clean. 4. Cool on wire rack.
