Saw this one in a magazine and thought it looked good With a few modifications I tried it last night. Cauliflower is not one of my wife's favourites but she loved this.

  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 cups cauliflower cut up
  • 5 cloves garlic
  • 2 tbsp mayonnaise reduced fat

Add garlic and cauliflower to a pot of water and cook until tender. Drain water and mash adding salt, pepper and mayonnaise. Serve topping with some fresh parsley if desired.
