  • 2 lbs carrots chopped
  • 1 large apple any variety chopped
  • ground ginger salt, ground pepper 1 teaspoon each
  • red pepper sauce - optional (can use pinch chili flakes)
  • light coconut milk 14 oz can

Wash and scrub carrots and apples. Chop without peeling. Place in soup pot and cover with water. Add ginger, salt and pepper. Cook until carrots and apple are tender, 25-30 min. Turn off the stove, add coconut milk , red pepper sauce and let cool. Once cooled using hand blender, puree and serve. This soup is simple, healthy, rich and delicious
