  • 6 egg whites
  • 1/2 cup coconut milk
  • 4 bananas
  • 1 cup oat bran
  • 1 apple unpeeled
  • 1 tbsp golden flaxseed
  • 1 tbsp almod flour (or almond meal)
  • 3 tbsp raisins or cranberry (i use cranberry)
  • 3 tbsp cinnamon (or more if u want)
  • 1/2 cup pecans or walnuts (optional) chopped
  • 1/2 cup coconut (optional) shredded

Blend everything in the blender, except cranberries, pecans, coconut (add at the end after blending) Put in in a bundt cake pan. Use Pam spray to coat or coconut oil and oat bran, if you don't have a non-stick pan. Bake it at 350º for 40 mins or until an inserted toothpick comes out clean. Suggestion: add pecans, coconut, and a bit of sugar if it's not sweet enough. If you double the recipe, bake for 1 hr and keep testing, inserting a knife to see if it comes out clean and adding 20 mns of baking time as needed.
