Shred apples, zucchini, carrots and onions (if using) in a food processor or veggie chopperDump shredded ingredients into a colander and let any excess water drip awayLet sit for 5 minutes and pat dry to remove the remaining water and place in a large bowlAdd egg, flour, and chopped parsley and mix thoroughlySalt & pepper to tasteWarm oil in large pan over medium heatWhile oil is heating, form fritters using the batter into desired shapes & sizesDrop fritters into pan forming a single layer and cook for 2 to 3 minutes on each sideContinue cooking fritters in single layers until the batter is goneServe warm and garnish with chopped dill, if desredYou may be able to come up with other ways of making the fritters; you can shape them like balls, or even like donuts. Here is the thing: You do not need to deep-fry them. Less than a cup of coconut or olive oil can do the same trick as a deep fryer. If you have a very good heat-conducting pan, just spritz it with oil and you can also get the outside crunch and the inside tenderness that you want to get in these types of foods.
