These muffins can be made somewhat healthy with the addition of whole wheat flour, protein powder and canola oil instead of butter.

  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 cup sugar
  • 1 1/2 teaspoons ground cinnamon
  • 2 cups all-purpose flour use half whole wheat if desired
  • 1 teaspoon ground allspice, nutmeg, and/or cloves
  • 1 teaspoon baking soda add a pinch of salt too
  • 1/4 cup + 2 t canola oil
  • 1 cup applesauce i used chunky
  • 1/2 scoop protein powder
  • 1/2 cup raisins, nuts, etc.

In a bowl, combine flour, cinnamon, allspice, protein powder, salt and baking soda; set aside. In a mixing bowl, mix oil and sugar. Beat in eggs, applesauce and vanilla; stir into dry ingredients just until moistened. Fold in raisins and/or nuts. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees F for 20-25 minutes or until muffins test done. Cool in pan 10 minutes; remove to a wire rack.
