I created this recipe to use up some leftovers and what I had on hand. But it would be good with just about any kind of fruit. Great for a chilly winter morning.

  • 1 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1/4 cup raisins
  • 1/4 cup orange juice
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsweetened shredded coconut
  • 1 apple cut into chunks
  • 1 pear cut into chunks
  • 1 orange (cara cara or blood, if available), peeled, sectioned and cut into chunks
  • 1/8 cup light coconut milk
  • 1/4 cup golden raisins
  • 1/4 teaspoon ground coriander
  • 2 tablespoons pecans chopped
  • 4 tablespoons ezekiel 4:9 cereal (optional)

Combine all ingredients except the pecans and cereal in a large microwave-safe bowl. Microwave on high about 6 minutes until the flavors have combined and the fruit is tender but still crispy. Mix in the pecans. Top each serving with 1 tablespoon Ezekiel cereal for extra crunch, if desired. Serve warm.
