  • 1 x 25 g cub of brewer’s yeast*
  • 2-3 pinches of salt
  • 1/2 l warm water (“not too hot not too cold.”)
  • 1 kilo flour
  • note: you can buy stuff called “brewer’s yeast” in and will not raise the dough. in italy they used yeast that came in a crumbly cube, which i have not been able to find yet in d.c. so, a friend used an equal weight of the dry fleischmans yeast that comes in packets. because of the 24-hour fermentation, i’

1 Mix the first four ingredients and wait 1/2 hour. Add the flour. Cover with plastic and wait 1/2 hour. 2 Grease a sheet pan with olive oil 3 Put the dough in the pan and spread it out. Wait a few hours. Shape, sprinkle coarse salt on top. Bake 30 minutes at 400-ish F. Rotate pan half-way through baking.
