During cold months, this Baked Apple Cinnamon Oatmeal makes a warm and hearty breakfast plus the house smells amazing while to cooks. Last week I wanted anything but fall comfort food after over-indulging at Thanksgiving but this weekend I woke up craving it. All I wanted was a big bowl of apple crisp but unfortunately we had already gone through three batches of this Cinnamon Cranberry Apple Crisp during Thanksgiving week so it was time to switch it up. Baked oatmeal is one of my favorite dishes for lazy weekend mornings, so I decided to make an apple crisp inspired baked oatmeal full of cinnamon, baked apples, and brown sugar. To make sure the apples got soft and delicious, they are baked them first with cinnamon and brown sugar. You could add some melted butter as well if you want a richer flavor. Then the oats are added along with milk and an egg to help everything come together. The result is a mix between oatmeal and a breakfast bar. Full of apple cinnamon flavor and hearty and filling so that you aren't hungry two hours after breakfast. One quick note on the recipe, I try not to use too much sugar in the recipe since the apple brings a lot of sweetness on it's own, but you may want to add a bit more sugar, honey, or maple syrup if you have a sweet tooth. 1 Preheat the oven to 350 degrees. 2 Add the apples to a glass baking dish and toss with cinnamon and brown sugar. Cover with foil. Bake for 20 minutes. 3 Meanwhile, mix together the oats, brown sugar, cinnamon and salt. Mix together the egg, milk, and vanilla extract. 4 Remove the apples and mix in the oat mixture. Then pour milk and egg mixture over top and give it one quick stir. 5 Bake for 30 minutes.
