Tell Saint Peter at the golden gate that you hate to make him wait, but you gotta have some more pimento cheese! This southern American classic gets a kick from dill pickle and the heat of a little jalapeño.

  • 1/2 cup parmesan cheese shredded
  • 1 teaspoon cracked black pepper
  • 16 ounces extra sharp cheddar cheese (i like cracker barrel) shredded in food processor (preferable to buying it shredded in store)
  • 1/2 cup good mayo
  • 1/2 cup kosher dill pickles diced or processed fine
  • 2 tablespoons jalapeã±os diced or processed fine
  • 1 heaping tablespoon cajun seasoning or dehydrated spice blend i prefer: cajun trinity with garlic by rex or bayou belle
  • 8 ounces red pimento diced

1. Shred, grate, dice all ingredients as described. 2. Very thoroughly combine all ingredients with wooden spoon/s (or food prep-gloved hands) in large pot or bowl. 3. Cover and refrigerate for at least 3 hours before serving. 4. Great with crudités, especially bell pepper, carrots and celery, and all favorite crackers and canapé bases. Makes enough for two approximately 12-person parties!
