  • 2 large eggs
  • 1 teaspoon vegetable oil
  • 3 breakfast sausage links any brand
  • 2 tablespoons onion finely chopped
  • 2 tablespoons red bell pepper finely chopped
  • 1 tablespoon green onion finely chopped
  • 1 medium baking potatoes finely chopped
  • 4 flour tortillas medium
  • 2 pinch salt
  • 2 pinch black pepper
  • 1 teaspoon 2% milk
  • 1/4 cup shredded cheese cheddar or other
  • 2 tablespoons hot sauce any brand (i used taco bell fire!)

1. In a small bowl whisk eggs, a pinch salt and pepper, and milk. Set aside. 2. Heat a small pan over medium heat, add sausages. Cook, turning often. 3. Meanwhile, in a medium frying pan, heat vegetable oil over medium-high heat. Add diced potatoes, season lightly with a pinch of salt and pepper. Cook, stirring often. 4. Once the sausages are cooked through, turn the heat off. Once the potatoes are done, remove to paper towel to drain excess grease, wipe pan and return to burner over low heat. 5. Heat a third small pan over medium heat greased with Pam. Add finely chopped onions and bell pepper and saute for 3 minutes. 6. Meanwhile, heat the tortillas about 1 minute per side, transfer to work area. 7. Add Eggs to the pan with the onion and bell pepper, cook, stirring often. Once eggs are to your desired texture add the Green onion, stir then turn the heat off. 8. To construct the wrap, overlap 2 flour tortillas, add some shredded cheese, then add 1/2 the potatoes, 1/2 the sausage, 1/2 the egg mixture, fold over, fold sides in, then roll to wrap. Slice in half and top with hot sauce. Repeat process for the second breakfast wrap. Enjoy!
