  • 1/2 cup mayonnaise
  • 1 teaspoon smoked paprika
  • 1 stalk celery finely diced
  • 1 tablespoon prepared horseradish
  • 2 tablespoons creole mustard or a mustard that you prefer
  • zest and juice from 2 lemons
  • 2 tablespoons tabasco sauce (see note i skipped this)
  • 1 teaspoon cayenne powder (i used much less)
  • 3 green onions thinly sliced (white and green parts)
  • 1/2 jalapeã±o, finely chopped (i skipped this)
  • 1/2 medium yellow onion finely diced (and this)
  • 1 pound skinned and flaked smoked whitefish
  • saltine crackers to serve
  • 1 tablespoons finely chopped chives for garnish
