1. Boil peeled and diced potatoes in salted water until done. 2. Drain and set aside to cool to room temperature. 3. In a medium bowl, combine the mayo, cider vinegar, sugar, mustard, salt, pepper and relish (with juice!); stir well and place in fridge. 4. Once potatoes are cooled to room temp, put in a large bowl and add the minced onion. 5. Chop the hard boiled eggs to desired size and add to potatoes and onions; toss. 6. Remove cooled mixture from fridge and pour into potato bowl; toss until evenly coated. 7. Garnish with paprika if you desire. 8. Place back in fridge to chill until supper time and enjoy!!
