Cut cauliflower into small florets and boil until tender.Heat olive oil over low-medium heat in skillet and sauté until translucent. (Do not increase heat to try to caramelize faster!)Slice bacon strips into small pieces and brown until crisp.Once onions are translucent, add garlic and continue to sauté until onions are browned.Once cauliflower is tender, add to food processor with yogurt and mix until smooth.Transfer cauliflower to a large mixing bowl. Add in half of bacon and onions. Add in salt, pepper, ¼ tsp paprika, and ¼ cup of gorgonzola. Mix together.Transfer mixture into an ungreased baking dish, sprinkle remaining ¼ cup cheese and ¼ tsp paprika on top. Broil 2 minutes.Top with remaining sautéed onions, bacon, and chopped scallion.Enjoy! Store in air tight container for up to 3 days.
