Preheat oven to 355I used my blender to grind up the oats, cashews and plums, all separately, then I added them to a bowlAdd in the baking powder, salt, coffee, vanilla, coconut oil and egg and mix well and let sit for about 5 minutesThe dough will be moist, so either using your hands or spoons, make 4-5 balls and fltten them before placing them on a double parchment lined baking sheetBake cookies for 15 minutes and let coolTop with melted dark chocolate if you want to stick with a less sweet cookie, or use melted semi sweet or milk chocolate for a sweeter kick**I did not use any sugar in this version of these cookies and instead relied on the sweetness of the plums and melted semi sweet chocolate to balance off the sweetness. As this isn't a super sweet breakfast cookie, please feel free to add a teaspoon or two of honey or sweetener of your choice if so desired.
