Give these light and delicious muffins a chance. They are quick and easy. I don't like Mayo, at all. An elderly woman made them for our lunch, and I had to be polite and try them. I fell in love with them, they are wonderful. Very tasty with butter and jam, or just dipped in gravy. You'll love them, and so will your family.

  • 1 cup self rising flour
  • 1 teaspoon sugar
  • 1 tablespoon mayo (heaping)

Heat oven to 450 Add all ingredients in bowl and mix Spray muffin pan with a non-stick spray pour mixture into prepared muffin pan bake about 15 minutes until golden brown IMPORTANT: keep and eye on them, as soon as the top is golden brown, take them out. Oven temp's can vary, there-by making the cooking time vary a little also! I don't suggest using paper baking cups, these muffins are so light they will tear into pieces when the paper is pulled off them.
