In a large saucepan, cook sausage over medium heat until no longer pink; drain and set aside. In same pan, saute onion & carrots in oil until tender (~10 minutes). Add garlic; saute 1 minute longer. Add the pasta, beans, tomatoes, broth, juice, vinegar and seasonings; bring to a boil. Cook uncovered 8-10 minutes or until macaroni is tender. Reduce heat to low; stir in sausage and spinach. Cook for 2-3 minutes or until spinach is wilted. Garnish with parmesan cheese. (Or, can add all ingredients except pasta & spinach & simmer for up to 50 minutes; then boil pasta , add pasta & spinach to pot; simmer for 10 minutes)
