  • 1 1/2 tsp salt
  • 1 cup carrot shredded
  • 2 tsp oregano
  • 2 tsp basil
  • 3 tsp olive oil
  • 1 tsp thyme
  • 2 tsp garlic minced
  • 1 tsp vinegar
  • 1 1/5 lbs italian turkey sausage or mix with hamburger (combo)
  • 2 sm onion chopped
  • 2 cans great northern beans
  • 2 cans red kidney beans
  • 4 can (14 oz) diced tomatoes (1 w/ green chilis)
  • 2 sm tomato paste
  • 1 can (12 oz) v-8 juice
  • 5 cup chicken broth
  • 1/2 can (16 oz) pepper 1/2 - 1 tsp
  • 3/4 lb ditali pasta (or 1 lb)
  • 1 cup spinach fresh, cut into strips
  • 5 tsp parmesan shredded

In a large saucepan, cook sausage over medium heat until no longer pink; drain and set aside. In same pan, saute onion & carrots in oil until tender (~10 minutes). Add garlic; saute 1 minute longer. Add the pasta, beans, tomatoes, broth, juice, vinegar and seasonings; bring to a boil. Cook uncovered 8-10 minutes or until macaroni is tender. Reduce heat to low; stir in sausage and spinach. Cook for 2-3 minutes or until spinach is wilted. Garnish with parmesan cheese. (Or, can add all ingredients except pasta & spinach & simmer for up to 50 minutes; then boil pasta , add pasta & spinach to pot; simmer for 10 minutes)
