Place a large saucepot over medium-high heat and once the pan heats, add in the sausage, crumbling with a wooden spoon. Cook for about 10-15 minutes or until browned on all sides. Add in the garlic and onions, season with salt and pepper and let cook for 3 minutes or until onions begin to soften. Add in the kale and cook for 1 minute to combine the flavors. Add in the chicken broth and oregano and raise heat to high and bring to a boil. Once boiling, add in the carrot noodles and stir to combine. Reduce heat to low and let cook for 5 minutes or until carrot noodles are cooked through.When done, divide into bowls and garnish with parmesan cheese and red pepper flakes.
