Split potato in half. Slice partially through from flat side to skin in both directions. Sprinkle with olive oil, sea salt, garlic, onion and black pepper. Place on baking sheet face side down. Bake at 400 for 30 minutes. Turn over and finish baking until well browned. (About 20 more minutes). Top with cheese or favorite topping and serve hot.
