  • 1 pound ramen cooked, unseasoned

  • 1 cup light coconut milk

Cook ramen noodles without flavor packet Warm up your sesame oil in a saucepan, throw in ginger and garlic. Cook 1 minute, Toss in the soy sauce, cayenne pepper, peanut butter, lime juice and cumin and simmer at a medium-low heat, stirring often. Once you have a creamy, smooth sauce, take it off the stove and add your sugar and red pepper before mixing the sauce into your ramen and serving. *Serve with any of the following toppings: chopped roasted peanuts, steamed sugar snap peas, sliced radishes, fresh chopped mint, scallions or chives, crunchy rice noodles and lime wedges.
