  • 1/2 cup cilantro chopped
  • 3/4 cup onion (walla walla sweets work best) finely chopped
  • 2 cups tomato diced

Slice up the loaf of french bread to make 8 servings. Combine remaining ingredients into a bowl. Drizzle 2 tbs of olive oil into bowl and blend well. Place bowl covered into the fridge for 1/2 hour. To serve, drizzle olive oil onto each slice of bread, and spoon dip on top.
