  • 3 lbs chuck roast
  • 3 lg yellow onions
  • 1 cans ranch style beans
  • 1 cans ro-tez tomatoes
  • 1 cans chicken stock
  • 1 cup mild chili powder (up to 2 cups)
  • 1 cup red wine (approximately)
  • 1/4 cup smoke flavored bbq sauce
  • 8 tbsp roux (up to 10 tbsp)

Dice and brown meat, dice and brown onions in a large covered pot. Add meat, onions, beans, tomatoes, stock, chili powder, garlic, red wine and BBQ sauce. Simmer for 2 to 3 hours, stir often, then add Roux to thicken. Serve with cheese, onions, fresh sliced chili peppers. 8 to 10 people.
