1) Preheat Oven to 350 F. 2) In a heavy duty oven safe pot, heat olive oil. When shimmering add the onion and saute until translucent. Add the rice and saute until the rice is also translucent. 3) Turn off burner and add boiling chicken broth. 4) Cover the pot with aluminum foil and then place the lid on top. This creates a water tight seal. 5) Bake in the oven for 20 minutes. 6) Let sit for 10 minutes. Use a fork to fluff the rice and serve.
