This is a dish that I made by accident but it came out delicious. It is hearty and filling.

  • 1 cup milk
  • 1 cup sour cream
  • 1 can corn
  • 1 package taco seasoning
  • 1/2 cup mozzarella grated
  • 2 cups white rice
  • 1 packet chicken stock
  • 1 1/2 pounds boneless chicken breasts
  • 1 package italian dressing (dry)

Combine all wet ingredients in crock pot. Mix until blended. Add both seasoning packets. Stir until well blended. Trim chicken and set in mixture. Make sure that is all covered evenly. Add corn and cheese. Cook for 4 hours. Mix, shred chicken and add uncooked rice. Mix until blended. Cook 1 more hour or until rice is cooked. Serve with crackers or biscuits.
