I invented this cocktail - no, it's not been done before and yes, it's really good! You can use any supermarket-brand red vermouth but extensive trail and error has established that Mount Gay Eclipes rum and Old Jamaica Extra Fiery Ginger Beer are what you need to make the real thing. Whilst other rums and ginger beers may be used as a (poor) substitute, The King's Ginger Liqueur is non-negotiable!

  • 200 ml mount gay eclipse rum
  • 200 ml red vermouth
  • 100 ml the king's ginger liqueur
  • 4 chunks crystalised ginger (optional)
  • 4 slices lime (optional)
  • 2 cans old jamaica extra fiery ginger beer

Combine the rum, vermouth and liqueur in a jug and out in the fridge. Prepare the lime slices. Pour the mix over ice and top up with the ginger beer. Add the lime and chunk of crystallised ginger on a cocktail stick, stir and serve.
