Add first three ingredients to Instant Pot, secure lid and put valve into secure pressure setting. Select Manual and adjust to high pressure. Adjust cooking time for 45 minutes - 45 minutes provides extremely tender meat. After the cycle is complete allow to rest for 10-minutes before quick releasing pressure manually with valve. Remove lid and stir. Add vegetables, ensuring you stay below the maximum fill line. Put the lid back on and secure the valve to pressure. Select manual again, and set time between 5 and 15 minutes. Selecting 15-minutes results in really tender vegetables, adjust to your liking. Allow to sit after cycle is complete for 10-minutes and release pressure. Serve and enjoy! Note: Any vegetables can be used in this stew, these were the vegetables available at the time of creating the recipe. If you prefer other vegetables in your stew, simply change them!
