  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 2 teaspoons sesame oil
  • 6 green onions thinly sliced
  • 1 tablespoon low-sodium soy sauce
  • 1/4 cup castor sugar
  • 1/2 - 1 chinese cabbage (i usually use napa cabbage) shredded finely
  • 1/2 cup slivered almonds or pinenuts lightly roasted
  • 1/2 - 1 cup fried noodles

Combine all dressing ingredients (vinegar through olive oil) in a saucepan. Stir well over low heat until the sugar dissolves. Cool. Toss the cabbage, green onions and almonds in a salad bowl. Add dressing and mix well. Just before serving add the noodles and toss thoroughly. Option: add shredded bbq chicken or pork to make it a meal.
