  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup parmesan cheese grated

  • 1 tsp garlic minced
  • 1 tsp mustard
  • 3 bunch kale (enough to feed 4 people)
  • 1/4 cup raisins (or currants, or dried cranberries)
  • 1/4 cup toasted almonds i prefer slivered
  • 1/4 cup crunchy chow mein noodles (or croutons)

Whisk together the dressing ingredients at the bottom of a large missing bowl. Add the kale (cut into bite-sized pieces), raisins and almonds. Toss to coat with dressing. Add cheese and chow mein noodles.
