I had some leftover Duck from the weekend and made a great duck salad!

  • 1 avocado chopped
  • 1 cup duck shredded after cooked
  • 6 spring onions sliced
  • 1/2 carrot grated
  • 1/2 bag salad leaves whiichever you prefer
  • pita chips for crushing and sprinkling on top

Great way to use leftover Duck is to make a duck salad. Arrange the salad leaves in a big bowl, then scatter over the shredded duck, chopped avocado, chopped red chile and chopped spring oninons. Give it a quick mix, making sure you can still see some of the lovely ingredients above the salad leaves. Then grate the half carrot over the top, and crunch up and scatter over the pita chips. I personally don't think this needs much dressing - all I do is drizzle a little lemon oliver oil over the top and season with salt and black pepper.
