Easy, healthy marinated salad. Can also use white vinegar. Have not tried it with red wine vinegar though.

  • 1 cup water
  • 4 tablespoons sugar
  • 3 each cucumber peeled and sliced- english or regular
  • 3 each tomatoes cut into 1/2 inch chunks
  • 1 medium onion sliced into rings- i like sweet onion
  • 1/2 cup cider vinegar can use white vinegar
  • 1/4 cup olive oil or other light oil
  • 1 teaspoons salt some like 2 teaspoons or add at table
  • 1 teaspoon black pepper ground course

In a large bowl, mix the vinegar, oil, water, sugar, salt and pepper. Whisk with a fork. Add the cucumbers, tomatoes and onion. Mix well. Refrigerate for at least 1 to 2 hours before eating.
