  • 1 tablespoon shredded sweetened coconut plus extra for garnish
  • 1 (6oz) container fat free yogurt coconut flavor - i use dannon light n fit toasted coconut (if you can't find this, use vanilla and add a drop of coconut extract)
  • 1 cup fresh pineapple cut into pieces
  • 1/2 cup milk of choice i used unsweetened vanilla almond breeze
  • 3-5 ice cubes

If you want to garnish with toasted coconut, spread some sweetened shredded coconut on a parchment lined baking sheet and bake at 350 degrees F for about 5 minutes, until golden brown. Make sure you watch it so that it doesn't burn. I do this in a toaster oven. Set aside to cool Add all ingredients above to a blender. Blend on high until smooth. Pour in a tall glass and garnish with toasted coconut, if desired.
