This is hands down the best Caesar Salad I've ever had. I first tried it when a non-cooking friend picked some up from our local health food store to bring to a MOPS retreat. It was so good that my friend Alison of Health Nut Nation shared the recipe on her blog. It's a great way to get in some ultra healthy greens in a tasty way. If you're not feeling sure about the greens though, at least try the dressing. Yum!

1 tablespoon cooking sherry
2 teaspoons dijon mustard
2 teaspoons ground pepper
1/2 cups olive oil
1 cup vegenaise (or mayo)
2 tablespoons vegan worcestershire
1/4 cups lemon juice
1 tablespoon minced garlic (i prefer fresh pressed)
1 bunch swiss chard stems removed and cut into ribbons
In a medium size bowl whisk together all ingredients except the greens (and cheese if using) to make the dressing.
Toss the greens and dressing together in a large bowl. Add Parmesan cheese if desired and serve!
