A meal I came across outside the Gougin museum in Paris. Delicious, light healthy salad. Use as a side dish, or add a protein and it's a wonderful meal.

cumin
quinoa or israeli couscous (i liked it better)
goji berries softened (you could substitute craisins)
green apple diced small. only green apples, others don't work well
baby peas
spring onion diced green onions worked well
cilantro to taste. a little goes a long way.
tomatoes sliced wedges
lime sliced wedges. conversely, i squeezed the lime ahead of time and just mixed the juice right in.
Cook the quinoa or couscous, and then chill down in an ice bath. Add remaining ingredients and mix together. Best made ahead and chilled in the fridge.
