A meal I came across outside the Gougin museum in Paris. Delicious, light healthy salad. Use as a side dish, or add a protein and it's a wonderful meal.

  • cumin
  • quinoa or israeli couscous (i liked it better)
  • goji berries softened (you could substitute craisins)
  • green apple diced small. only green apples, others don't work well
  • baby peas
  • spring onion diced green onions worked well
  • cilantro to taste. a little goes a long way.
  • tomatoes sliced wedges
  • lime sliced wedges. conversely, i squeezed the lime ahead of time and just mixed the juice right in.
