  • 2 heads red leaf lettuce washed & torn for salad
  • 1 large purple onion cut in rings
  • 2 cans mandarin oranges drained
  • dash black pepper
  • croutons (optional)
  • caesar salad dressing (i use low-fat)

1. Wash and prep lettuce for salad 2. Cut purple onion and add to lettuce 3. Add drained oranges to salad 4. Toss. Salad can be made several hours ahead of time and refrigerated Right before serving toss with Caesar dressing and croutons (if using)
