My husband is not a fan of cooked Kale, but apparently raw kale is a hit! And super easy! I totally cheated with premade dressing, but the fresh lemon and Parmesan take it up a notch. Kale doesn't wilt like lettuce, so this is good to make ahead for parties! You can also add a protein and serve with bread to make this a balanced dinner :)

  • 3 cups kale bagged, prewashed and precut
  • 2 teaspoons light oil grapeseed and light olive oil work best
  • 1/2 fresh lemon do not substitute bottled lemon juice
  • 2 tablespoons shaved fresh parmesean not grated
  • 2-3 tablespoons premade cesar dressing wishbone brand works fine, but choose your own :)

1. Place kale in bowl, add lemon juice and oil and let sit for 3-4 minutes to soften the leaves. 2. Add desired amount of Cesar dressing, shaved Parmesan, and croutons.
