  • 2 plum tomatoes chopped
  • 3 tablespoon olive oil
  • 1 clove garlic finely chopped
  • 2 tablespoon balsamic vinegar
  • 1 small red bell pepper chopped
  • 2 can (16 oz) black-eyed peas rinsed
  • 1 jalapeno peppers finely chopped
  • 1/2 cup parsley fresh, chopped (i like cilantro better)

In large bowl, mix oil, vinegar, garlic, sugar, and 1/4 tsp each of salt and pepper. Add Peas, tomatoes, peppers and toss to coat. Fold in parsley or cilantro.
