  • 1 small red onion thinly sliced
  • 1 lb fresh spinach (baby spinach is best)
  • 3 hard-cooked eggs finely chopped
  • 6 slices bacon crisp cooked, drained and crumbled
  • 3 large fresh mushrooms sliced (i use more mushrooms)
  • parmesan cheese, to taste grated
  • croutons
  • dressing (recipe follows)
  • 1-2 tablespoons onion minced
  • 1 c vegetable oil
  • 1/3 c vinegar (i use rice vinegar)
  • 1/3 c sugar
  • 1 t prepared mustard (i use dijon or nathans mustard)
  • 2 t poppy seed
  • 1/2 t salt
  • 1/2 t pepper
