This recipe allows you to experiment if you'd like by using the unique flavors of pudding (whichever flavor you pick) and mix it with the flavors of the fruit and even the different flavors of cool whip as well.

  • 1- 8 oz. can pineapple chunks or tidbits in it's own juice
  • 1- 8.5 oz. can fruit cocktail in heavy syrup
  • 1- 11 oz. can mandarin oranges
  • 1- 3.4 oz. box vanilla or french vanilla pudding (i've even used white chocolate pudding before)
  • 4- ounces cool whip- don't matter what kind only need half of a small container.
  • 2- small bananas you may only need to use 1
  • 1/2- cup of either strawberries or apples
  • 1/2- cup seedless grapes or blueberries
  • 1/4- cup chopped walnuts or sliced almonds optional, i left them out

You will want to get a fairly good size bowl (maybe a gallon size or little bit smaller) but the gallon size will make it easier to mix together. As for the smaller bowl to mix the dressing ingredients maybe a 4-6 cup bowl to mix the other ingredients that make up the "Dressing part of the fruit Salad". Or just mix the dressing part first, which is how I did it. First you need to drain and retain 2 cups worth of the juices from the cans of fruit. Then you mix in the JELLO pudding and whisk until their are no more lumps. Second you add the cool whip to the JELLO pudding mix until combined, then you can start adding your fruit from the cans and see how quickly your bowl starts to fill up. Be sure to dice your Apple or Strawberries (I didn't even use a whole Apple in mine), then thinly slice your bananas by opening them 1 at a time and putting them in 1 at a time to gauge how much you will use. Same goes for your Grapes (which I sliced in half to make them go further) or Blueberries if you decide to go that route. Next throw in the marshmallows, mix and let sit in refrigerator unilateral needed. I even let mine sit for only 30 min and it was cold and still tasted good. The great thing about this recipe is that it's flexible, you can use all fresh fruit and just buy pineapple juice to mix with the pudding. It yields about 6-8 servings.
