Chicken salad is one of those comfort foods I never seem to tire of.  I’ll make up a batch on Sunday and have it chilling in the fridge for sandwiches and salads the rest of the week. Here’s my favorite recipe that you can use as is or tweak with you favorite herbs and spices. “Chicken salad is any salad that counts chicken as a main ingredient.   • 1 tsp lemon juice
  • 1 tsp worcestershire sauce
  • 3/4 cup mayonnaise
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • salt and pepper (to taste)
  • 1 tbsp milk
  • 1/4 cup walnuts (chopped)
  • 1/2 cup celery (diced)
  • 1/2 cup onion (diced)
  • 1 tbsp ranch dressing
  • 1 lb chicken breast (fully cooked and chopped)
  • 1 cup seedless grapes (halved)
  • 1/4 cup raisins or craisins

Bake or skillet cook chicken till done. On a cutting board dice chicken breasts into small cubes. Add to medium mixing bowl. Chop and dice celery, onions, nuts and add with raisins to mixing bowl. Add all remaining ingredients to mixing bowl, fold and blend together thoroughly. Refrigerate for 1 hour prior to serving. Seve over fancy greens or pre-packaged salad mix of your choice
