This is a recipe that my family and have been making for quite sometime now and believe it or not it's off of a pasta box! This dish puts a new spin on pasta and salad alike, but is still light enough to be eaten as lunch and heavy enough for dinner. It also takes about a half an hour to cook, so it's great for those busy weeknights with the kids going here and there or just a quick lunch and there will be plenty of leftovers for later!

  • 1 lb boneless, skinless chicken breasts cooked and diced medium
  • 1/2 lb roma or vine riped tomatoes cut in small wedges (i prefer diced)
  • 1 bunch green onions diced
  • 1 1/2 cups caeser salad dressing
  • 1 cup croutons (i prefer
  • 3/4 cup grated parmesan cheese

Cook the pasta according to package directions. Rinse pasta w/ cold water and drain. Place the cooled pasta in a large bowl. Stir together tomatoes, green onions, chicken, and pasta; add dressing and mix thoroughly. Top with croutons and parmesan cheese. Chill and serve.
