  • 1 green pepper diced
  • 1 teaspoon white vinegar
  • 1 large onion diced
  • 1/2 cup dill pickle juice
  • 5 pounds potatoes boiled in skins
  • 7 celery stalks diced
  • 1 32 oz jar dill pickles diced
  • 1 1/2 cup miracle whip
  • 2 1/2 tablespoons yellow mustard

In medium bowl; mix onion, green pepper, celery, pickle, and eggs. In another medium bowl; mix miracle whip, mustard (just enough to desired yellow color), pickle juice, vinegar, and salt. Mix together diced veggies & sauce. Boil potatoes until fork tender. Peel potatoes and dice well into large bowl. Lightly salt potatoes. Mix sauce with potatoes & adjust salt to preference.
