  • 1 (15 oz.) can black beans drained and rinsed
  • 1 1/2 cups cooked brown rice*
  • 1 (10 oz.) can ro*tel drained
  • 3/4 cup unsweetened almond milk (any milk will work)
  • 1 cup lite shredded mexican cheese blend or cheddar chee
  • optional garnish chopped fresh cilantro, diced avocado and/or salsa
