  • 1/3 cup dried cranberries (optional)
  • 6 cups fresh broccoli florets (about 2 medium heads)
  • â½ cup shredded carrots
  • â¼ cup diced red onion
  • 2 large apples finely chopped (i used gala apples)
  • 1/3 cup sliced dry roasted almonds or sunflower seeds or nuts of choice
  • 1 5-6 oz container plain greek yogurt (3/4 cup)
  • 1/4 cup clean ingredient mayo or additional greek yogurt
  • 1/2-1 tablespoon honey or sweetener of choice to taste
  • 1/8 teaspoon pepper to taste

In a large bowl combine broccoli, carrots, red onion, apples, almonds, and dried cranberries. To make the dressing: Whisk together Greek yogurt, mayo, apple cider vinegar, honey, salt and pepper. Add the dressing to the salad and toss to coat. Chill until ready to serve.
