  • 1 tablespoon red wine vinegar
  • 2 teaspoons worcestershire sauce
  • 1 teaspoons dijon mustard
  • 6 tablespoons oil i prefer olive but can use any
  • 3 tablespoons fresh lemon juice about 1 lemon - can add more/less to taste
  • 1 teaspoon ground black pepper only use fresh ground
  • 2 teaspoons garlic minced (can add more to taste)
  • 1 tablespoon anchovy paste do not omit this!
  • 1 egg coddled (can microwave for 30 seconds)
  • 1/2 cup parmesan cheese finely grated (like snow)

If you are using a brick of parmesan, then cut off about 1 ounce (1" square cube) and put in the blender to grate (until it looks like "snow"). Then add the rest of the ingredients and puree. Season with salt if needed. You can adjust the taste by adding more of any of the following based on your preferences - garlic, grated parmesan, anchovy paste, or lemon juice. Serve with Romain lettuce, crumbled bacon, and croutons. Garnish with shredded/shaved parmesan. You can also add cherry tomatoes.
