-Heat a grill over medium heat. Alternate threading shrimp and pineapple chunks onto skewers. (If using wood skewers, soak for at least 30 min beforehand.) -Spray grill with nonstick cooking spray and grill skewers 2.5 minutes per side, or until shrimp is pink and cooked thru. -In a small bowl, stir together dressing ingredients with a fork, or blend in a small food processor. -Plate veggies and top with skewers and dressing.
