  • 2 cups apples diced
  • 1 cup red grapes
  • 2 stalks celery sliced small
  • 1-2 cups quinoa chilled cooked w/veg broth
  • 1 tbsp nayonnaise
  • 2-3 tbsp tofutti sour cream
  • 1 splash rice milk

Add first five ingredients, stir lightly. Fold in Tofutti sour cream. Add pinch of salt and sprinkle of raw sugar (optional). I added a splash of rice milk to loosen it up. Stuff in Pita or use any way you would chicken salad.
